The only ones i can think of are Aerosmith's song Livin' On The Edge. There is an acoustic version on their compilation album Young Lust. However, the electric version does not appear on that same album.

Also, the Foo Fighters' Greatest Hits album has the normal electric version of Everlong along with the acoustic version.

The Goo Goo Dolls have both an electric and acoustic version of Iris (the acoustic is a bonus track) on their album Dizzy Up the girl.

Metallica released Nothing Else Matters on their s/t album in '91 (obviously) and then a year later released the "elevator version" which is acoustic on the Sad But True UK single.

Tommy Lee had both the electric and acoustic versions of "Hello, Again" on his 2004 album Tommyland: The Ride. The acoustic version was a bonus track.

Other than that, all acoustic versions I have are live. But, stuff live Nirvana's unplugged or Eric Clapton's are so profesionally recorded (and probably edited) that sound-wise they still kickass.

I know most aren't really metal, but they're what came to mind.
