Worth giving a shout out to Paradigms Recordings. Lots of individual, unique albums have been released under them. Gnaw Their Tongues, Murmuure, Angelic Process, Hjarnidaudi, Book of Sand, and lots of lo-fi, neofolk, ambient, drone etc stuff.

Can't choose just one as I like almost everything, plus I but from so many DIY labels it's hard to keep track.
That being said, Profound Lore puts out killer stuff. Leviathan, Bosse De Nage, Coffinworm etc.

Insideout is interesting label when it comes to prog metal. Beside that, I never give attention to labels and I know that its a wrong move but I adore southern lord, profound lore and paradigms recordings for putting out high quality, independent and original records.

Profound lore: Altar of Plagues, Ash Borer, Castevet, Cobalt, Disma, Evoken, Grave Miasma, Indesinence, Morne, Occultation, Pallbearer, Portal, VHÖL
Dark Descent: Anguish, Emptiness, Miasmal, Anhedonist, Craven Idol, Lantern, Morgion
Pest Productions: Amiensus, Súl ad Astral, Sadhaka, Thy Light, Vallendusk, Apocynthion
Solitude Productions: Abske Fides, Ea, Evadne, Evoke Thy Lords, Narrow House, Ophis, Station Dysthymia, The Howling Void
And a special mention to Blood Music, who don't release many new albums but work hard on releasing top quality vinyl rereleases & have great customer service that constantly rewards regular customers. A few examples being: Strapping Young Lad, Lykathea Aflame, Ihsahn, Kauan, Aquilus, Toorn, Odium, Ensiferum, Nightbringer, Ne Obliviscaris.

On the list:
If I were to judge by amount of albums in my collection from a label, I think I have more Nuclear Blast albums than any other. Century Media probably come close though, and Spinefarm for the whole Finnish melodic metal thing, which is right up my street. But I doubt any of those three treat their bands too well.
Not on the list:
Ulterium Records (melodic, predominantly Christian, plus they did a charity single last Christmas raising money for the homeless, so they get points for that too)
Endtime Productions (extreme, predominantly Christian)
Whirlwind Records (extreme, predominantly Christian)
Blood Music (vinyls of quality releases; never bought anything from them but they seem really good)
InsideOut (progprogprogprogprog)
Kscope (amazing if you're into this softer 'post-progressive' (their description, not mine) stuff like Anathema, Steven Wilson, etc)
Prophecy Productions (a bit like Kscope but darker, with artists like Antimatter, Alcest, Empyrium and Klimt 1918)
Candlelight Records (while I'm not a fan of most of the black metal currently on the roster, they've released a bunch of Opeth and Insomnium in the past)
I can't really decide my absolute favourite, but if you were to ask me at any given moment what my favourite record label was, I'd probably say Ulterium.
...or Kscope.
Or InsideOut.

Really? Labels have always been useful in the music industry and still play an important role even if it's just for economies of scale. In reality they play other more important roles - marketing, distribution etc etc.
In the old days pre-internet if you liked a certain band, then looking at the label's catalogue was a great way of finding out similar sounding bands. So say I like thrash then just looking at Combat's or Noise Record's roster would net me a swag of yummy thrash treats. Was similar with Nuclear Blast (death metal) and Earache and Relapse (grind/death/industrial) or Subpop (grunge) or Moonfog and Candlelight for many things black metal.
Mind you that kind of specialisation has kind of disappeared.
Well nowadays the consumer can completely ignore the label, so while I recognize certain labels I don't have any opinion on the individual labels as a whole other than when they do something annoying.
